- 60 ml hot water, not boiling.
- 180 ml milk or plant-based drink.

Step 1: sift the matcha
Sifting helps prevent clumps and improves the final texture. Place the matcha in a bowl or wide cup and pass it through a fine sieve before adding water.
Step 2: add hot water
Use hot water, but not boiling water. If the water is too hot, it can make matcha taste more bitter. Add a small amount and mix until you get a smooth paste.
Step 3: whisk until foamy
Use a chasen or whisk and move quickly in a W shape. The goal is to blend the matcha well and create a light layer of foam.
Step 4: add milk
Warm the milk for a hot latte or add ice for a cold version. Pour the milk over the matcha and stir gently. For extra creaminess, froth the milk first.
